Three different things, and none of them is a fault. The skin on a cup of chai is milk: fat and protein setting at the surface as it cools. The thin film on black tea without milk is a mineral one, calcium from hard water combining with tea at the surface. Cloudiness in cold tea is a third thing again, called tea cream, and it is a sign the brew was strong.

These get discussed as one problem and they have three different causes, so they have three different answers. Worth separating, because the fix for one does nothing for the others.

What is the skin on top of my chai?

Milk. Almost always, and specifically the malai most Indian kitchens already know by name.

Heat full-fat milk and two things happen at the surface. Water evaporates from the top layer, concentrating what is left, and the whey proteins begin to denature and knit together. Fat rises into that protein mesh. The result is a skin that thickens the longer the pan sits and re-forms after you take one off.

It is not a sign of anything wrong with the milk or the tea. It is what full-fat milk does when it is heated and then left still. Buffalo milk, being fatter, does it faster and thicker than cow’s milk.

How to stop it forming

Keep the surface moving or keep it covered. Stirring while it sits, covering the pan, or simply pouring straight out rather than letting the chai stand are all effective, because a still, exposed surface is the requirement. Skimming it off works too, and gets you malai, which is the traditional argument for not minding it in the first place.

Then what is the film on black tea with no milk in it?

That one is genuinely a water problem, and it is a different substance altogether.

In hard water, calcium from the water combines with compounds from the tea at the point where the liquid meets the air, and the result is an iridescent film across the surface. You need three things for it: hard water, tea, and an exposed surface. Take away any one and it does not appear.

This is why the same tea leaves a slick on the cup in one city and none at all in another, and why it shows up in a cup left standing far more than in one drunk straight away.

How to stop that one

Softer or filtered water removes the cause outright. Failing that, a squeeze of lemon prevents it, which is part of why lemon tea rarely shows a film. Neither of these is relevant to chai, because the milk changes the surface chemistry entirely and you get malai instead.

Why does tea go cloudy when it cools?

This is the interesting one, and it is the only one of the three that is actually a compliment to the brew.

A strong black tea is full of caffeine and of the oxidised compounds that give it colour and briskness, the theaflavins and thearubigins. While the tea is hot, those stay in solution. As it cools past roughly 40°C they begin to bind to each other, forming a complex too large to stay dissolved and fine enough to scatter light. The tea goes hazy. The name for it in the trade is tea cream.

The key point: this happens most in strong, well-extracted tea. A weak brew stays clear because there was not much in it to come out of solution. Clouding is evidence of a cup with body, not of poor quality or of anything having gone off.

It reverses

Warm the tea again and the complex breaks up and the haze clears. This is the simplest way to confirm what you are looking at, and it is why the same glass can go cloudy in the fridge and come back bright on the counter.

If you are making iced tea

Tea cream is the whole reason home-made iced tea goes murky while the bought kind stays clear. Two things help.

Cool it fast. A slow cool through the temperature range where creaming happens gives the complex time to build into particles big enough to see. Brewing strong and pouring straight over a lot of ice drops it through that range quickly and leaves a brighter glass.

Or brew it cold from the start. Cold brewing extracts far less of what causes creaming, so the result stays clear on its own. It also tastes quite different, softer and less brisk, which for an Assam CTC is not necessarily what you were after.

A little acid, lemon, helps here too.

Is any of it harmful?

No. All three are ordinary physical chemistry: milk behaving like milk, minerals behaving like minerals, and a strong tea behaving like a strong tea. None of them indicates spoilage, adulteration or anything unsafe, and none of them means the tea has gone off.

Tea that has actually gone flat announces itself differently and much more plainly. It smells of very little, and it tastes rough without tasting of tea. That is a storage problem rather than a surface one.
